In a small bowl, whisk together the sauce ingredients and set aside.

Set a large skillet to medium high heat. Add the two oils and the tofu. You want the pan hot to stir fry and sizzle to brown the tofu. Cook for 8 minutes tossing frequently. Add the snap peas and red bell pepper and stir fry again for 5-6 minutes or until the snap peas have softened a bit.

Add the garlic and cook for another 1-2 minutes tossing mixture frequently. Add the sauce and cook until sauce has coated the ingredients and thickened, about 2-3 minutes. Add the cashews, toss to combine, and turn off the heat. Season stir fry with salt and pepper to taste and serve alone or with brown rice or quinoa.
